Veggie burger stuffed Kale is my new favorite lunch! The recipe makes a lot of veggie burger mixture, so make half if necessary. Enjoy!
1 1/2 cups water
1/2 cup dry millet
2 garlic cloves, finely minced
olive oil cooking spray
1/2 large onion
3 cups frozen spinach, kale or collard greens
2 stalks of celery, minced
2 carrots, minced
1 Tbsp cumin
1 cup almond flour
salt and pepper to taste
Rinse millet and prepare according to package.
Spray pan and saute garlic and onions over medium heat until onions become translucent. Add spinach/kale/collard greens, celery and carrots and cook for another 10 minutes. Stir in salt, pepper, cumin and millet. Remove from heat and add almond flour, until well mixed.
Set aside to cool.
Spray pan with olive oil spray add 1 cup of veggie burger mixture and cook for 5-10 minutes.
Microwave 1 kale leaf for 15 seconds.
Place veggie burger mixture, avocado, 4 halved cherry tomatoes and horseradish mustard on 1 Kale leaf and wrap like a burrito.
